This hearty breakfast skillet is a one-pan meal featuring Better Balance Chorizo, crispy potatoes, and colorful vegetables. It’s perfect for brunch, breakfast-for-dinner, or meal prep, delivering bold flavor and satisfying texture in every bite.

STEPS
  1. Boil diced potatoes for 5 minutes. Drain well.
  2. Heat olive oil in a large skillet over medium-high heat. Add onion and peppers; cook 3–4 minutes until  softened. 
  3. Add potatoes, smoked paprika, garlic powder, salt, and pepper. Cook 8–10 minutes, stirring occasionally, until golden. 
  4. Stir in Better Balance Vegan Chorizo and cook for 4–5 minutes until  heated through. 
  5. Garnish with fresh herbs and serve
INGREDIENTS
  • 1½ cups Better Balance Chorizo
  • 2 medium russet potatoes, diced
  • 2 tbsp olive oil 
  • ½ onion, diced 
  • ½ red bell pepper, diced 
  • ½ green bell pepper, diced 
  • 1 tsp smoked paprika 
  • ½ tsp garlic powder 
  • Salt and black pepper, to taste
  • Fresh cilantro or green onions, for garnish

  • Plant-based egg or tofu scramble
  • Avocado slices or salsa
